Tuscan Tortellini Soup

Tuscan Tortellini Soup

Ingredients

  • 1 Package of Refrigerated Tortellini

  • 2 Cups Fresh Spinach

  • ½ Cup Grated Parmesan Cheese

  • 1 Tbsp. Italian Seasoning

  • 2 – 15 oz. Cans of Diced Tomatoes

  • 1 Small Onion, Diced

  • 1 tsp. Salt

  • 1 tsp. Pepper

  • 1 lb. Boneless Skinless Chicken Breast

  • 4 Cups Chicken Broth

  • 1 Tbsp. Minced Garlic

  • 1 Cup Heavy Cream

Directions

  • Add All Ingredients except the Tortellini and Spinach to a large slow cooker
  • Cover and Cook for 5 – 6 hours on High
  • Remove Chicken and Shred with 2 Forks or meat claw
  • Add in Shredded Chicken, Tortellini and Spinach
  • Cook another 1 hour on High and serve warm
  • Top with Fresh Grated Parmesan Cheese, if desired
