Ingredients

  • 2 cups cooked chicken, cut into small pieces

  • 4 cups chicken broth or chicken stock

  • 8 ounces cheese tortellini (gluten free for gluten free)

  • 1 teaspoon poultry seasoning

  • 1 tablespoon oil

  • 1 cup onion, diced

  • 1 cup carrots, diced

  • 1 cup celery, diced

  • 1 handful parsley, chopped

  • 1/2 lemon, juice (optional)

  • salt and pepper to taste

Directions

  • In a large stock pot over medium-high heat, heat the oil. Add the onions, carrot and celery and cook until tender, about 8-10 minutes.
  • Add the chicken broth or stock, chicken and poultry seasoning, bring to a boil, lower the heat and simmer for 5 minutes.
  • Add the tortellini and simmer until just tender, for about 5 minutes.
  • Season with salt and pepper to taste and mix in the parsley.
