2 cups cooked chicken, cut into small pieces
4 cups chicken broth or chicken stock
8 ounces cheese tortellini (gluten free for gluten free)
1 teaspoon poultry seasoning
1 tablespoon oil
1 cup onion, diced
1 cup carrots, diced
1 cup celery, diced
1 handful parsley, chopped
1/2 lemon, juice (optional)
salt and pepper to taste
Directions
- In a large stock pot over medium-high heat, heat the oil. Add the onions, carrot and celery and cook until tender, about 8-10 minutes.
- Add the chicken broth or stock, chicken and poultry seasoning, bring to a boil, lower the heat and simmer for 5 minutes.
- Add the tortellini and simmer until just tender, for about 5 minutes.
- Season with salt and pepper to taste and mix in the parsley.
