Creamy Tuscan Garlic Tortellini Soup

  • 2 Tablespoons butter

  • 1 small white onion, diced

  • 3 cloves garlic, minced

  • 1 15 ounce can white beans, drained and rinsed

  • 1 Tablespoon Italian seasoning

  • 1 teaspoon salt

  • 4 cups chicken broth

  • 28 ounce can diced tomatoes

  • 9 ounce refrigerated tortellini

  • 2 cups cooked and shredded chicken

  • 2 cups spinach

  • 1 cup heavy cream

  • 1/4 cup grated parmesan cheese

  • 1/4 teaspoon pepper


  • In a large pot heat the butter over medium heat. Add onion and garlic, cook until tender. Add all ingredients together: chicken broth, diced tomatoes, white beans, heavy cream, parmesan cheese, Italian seasoning, salt and pepper. Bring to a simmer.
  • Add the chicken, tortellini, and spinach. Simmer for 10 minutes to thicken up and for the tortellini to cook.
